Summary: Overkill for most basic networks or domains, but if virtualization is on your radar, then Hyper-V definitely something to consider. Keep in mind that with Enterprise you can run 4 more virtual instances of Server 2K8 under just the one license which is nice for dividing roles.
Pros: Hyper-V on R2 is impressive. It certainly gives VMWare a run for its money. I run this software in a lab/dev environment personally (MSDN licensing) and in production for managed and hosted services. Cons: Microsoft licensing costs obviously. But depending on your use, this concern can easily evaporate. As with most Microsoft deployments, unless you are starting from absolute scratch or have the perfect environment, there are going to be the inevitable headaches getting everything to play nice.
