Default Digital cameras as "spy cameras"?

Is there anyway that I could install a digital camera (or video camera for that matter) and treat it like a "spy camera" of sorts but without anybody else knowing that it is there?

I also want to know if there's a way for me to monitor the goings-on through that camera from a remote area...like perhaps from a tree house 300 meters away from my home.

Any help would be greatly appreciated!
